Biography:

Dr. Guillermo Niño-Medina, is a full time professor of Food Industry Engineer in the Faculty of Agronomy, Autonomus University of Nuevo Leon, Mexico. He received his PhD in Food Scinece with research focused on the extraction and characterization of arabinoxylans from maize industry byproducts at the Research Center or Food and Development A.C. in Hermosillo, Mexico in 2010. He is a Level- I National Researcher in the National Research System of the Mexican National Council for Science and Technology, Mexico.

His research interests are focused on the functional aspects (phenolic compounds and antioxidant capacity) of cereals and legumes and their commercial products, extraction of high value-added products (phenolics and dietary fiber) from cereal and legume industry byproducts. He is an author/co-author of 12 papers published in the JCR ISI Web of Science Expanded Index and four book chapters in International publishers.
